Roman cuisine changed over the long duration (over a thousand years) of their ancient civilization. These habits were affected by the influence of Greek culture, the political changes from kingdom to republic to empire, and the enormous expansion of the empire which brought many new culinary habits and cooking techniques from the provinces. In the beginning the differences between social classes were not very great, but disparity grew with the empire.
